Yield: 10 to 12 servings

4 ounces coconut milk
2 ounces unsalted butter, cut into tablespoons
6 large egg yolks
6 large eggs
12 ounces granulated sugar
8 ounces cake flour
2 teaspoons baking powder
Pinch salt
1/2 cup desiccated coconut
Rum Simple Syrup, recipe follows
Ganache Filling, recipe follows
Coconut Spray, recipe follows
Macerated Berries, recipe follows

Preheat oven to 350 degrees F. Spray 2 (9-inch) round cake pans with non-stick spray and line the bottom of each with parchment paper.
Place coconut milk and butter in a small saucepan and heat over low heat.

Yield: 4 servings

12 large marshmallows
12 ounces bittersweet chocolate, cut into 3-ounce pieces
8 whole chocolate graham crackers
1/4 cup toasted coconut

Heat grill to high. Place marshmallows on skewers or sticks, 3 to a stick, and hold over the grates of the grill until golden brown on all sides and melted in the center. Place chocolate on 4 of the graham crackers. On each graham cracker, sprinkle 1 tablespoon of the coconut over the chocolate and then place 3 of the toasted marshmallows on the coconut. Place the remaining graham crackers on top of the marshmallows and wrap each s’more in foil. Place each s’more on the grill for 2 to 3 minutes. Remove from the grill and serve immediately.

Cook Time: 15 minutes

1 1/4 cups confectioners’ sugar
2 ounces (1/2 stick) unsalted butter, cut into small pieces
1 egg white
1/8 teaspoon salt
1 1/4 cups (5 ounces) unsweetened coconut, packed, plus additional for rolling patties
1 1/2 teaspoons vanilla extract
4 ounces semisweet or milk chocolate, cut into small pieces*
*If using milk chocolate, add 1 teaspoon of vegetable oil while melting.
