MEXICAN CHICKEN
3 cups cooked chicken, diced
2 cans (10-3/4 oz.) cream of mushroom soup
16 oz. can tomatoes and green chili sauce
4 oz. can diced green chilies (optional)
1 6-7 oz. pkg. plain Doritos
10 oz. sharp Cheddar cheese, grated
Mix chicken, soup, chili sauce and diced chilies. In large greased casserole dish, make layer of Doritos, add layer of chicken mix, sprinkle with half of cheese. Repeat layers with Doritos on top.
Bake in 350 degrees for 30 minutes until bubbly
approx 750 gms chicken thigh or breast fillets
200 gms green beans
1 cup (250 mls) coconut cream
Green Curry Paste:
3 small fresh green chillies, chopped
2 cloves garlic, chopped
3 spring onions, chopped
1/4 cup chopped
fresh lemon grass
1/4 cup chopped fresh coriander leaves
2 tblspns oil
2 tblspns water
1 teaspoon shrimp paste
1/2 teaspoon ground cumin
1/4 teaspoon ground turmeric
Put all ingredients for green curry paste into blender and process until smooth or if you don’t have a blender use the old fashioned way with mortar and pestle.Cut chicken into thin strips. 2 cups flour
1 tablespoon Lowrey’s seasoning salt
1 tablespoon garlic powder, optional
1 tablespoon salt
1 teaspoon white pepper
1 quart buttermilk
1 pint water
1/4 cup flour
1 tablespoon baking powder
Combine dry ingredients. Mix wet ingredients well with a whisk.
Preheat cooking oil to 340 degrees. With mallet, tenderize chicken breast. Dip breast into dry batter. Then, into wet batter. And, back into dry batter. Drop breast into grease and cook until chicken is done.
This Southern Fried Chicken recipe will turn out just like the locals prepare it down South.
Ingredients:
- 500 grams of chicken (cut into medium size)
- 2 tablespoons butter / oil
- 2 medium sized onion finely chopped
- 1 or 2 tomato finely chopped
- 1/2 teaspoon turmeric powder
- 1 bay leaf
- salt to taste
- 1-2 tablespoon finely chopped fresh coriander and mint leaves to garnish (if available)
