Norwegian Fattigmann 6 egg yolks
1/4 cup sugar
1 tablespoon melted butter
1/3 cup whipping cream
2 cups all purpose flour
1 teaspoon ground cardamom, or 1/2 teaspoon ground mace
1/2 teaspoon salt good quality vegetable oil, for deep frying powdered sugar, for sprinkling

Beat egg yolks until thick and lemon colored. Gradually beat in sugar. Gently stir in butter. Whip cream until soft peaks form. Fold into egg mixture. Sift or lift together the flour, cardamom, and salt. Gradually fold four into mixture to make a soft dough. Chill well. Divide dough in half. On lightly floured surface, toll each half to 1/8 inch thickness. Cut dough into 2 inch wide strips, then slash diagonally at 3 inch lengths to make diamonds. Cut slit in center of each diamond and pull one end through. Fry a few at a time in deep fat (375 degrees) for 1-2 minutes, until just light golden brown. While warm, sift powdered sugar over cookies.
