Chichen Curry

Ingredients:

chicken-curry- 500 grams of chicken (cut into medium size)
- 2 tablespoons butter / oil
- 2 medium sized onion finely chopped
- 1 or 2 tomato finely chopped
- 1/2 teaspoon turmeric powder
- 1 bay leaf
- salt to taste
- 1-2 tablespoon finely chopped fresh coriander and mint leaves to garnish (if available)

To be ground (Garam masala)
- 3 cloves garlic
- 1 inch cube of ginger
- 1-2 red chilli
- 1 green cardamom pods
- 3 cloves (laung)
- 1 piece cinnamon (dalchini) (2.5 cm)
- 1 tbsp cumin seeds (jeera)
- 1 tbsp coriander seeds (dhaniya)
- 1 tbsp black peppercorns
- 1/2 tsp fennel
- 2 pieces mace

Ingredients:
1. Fry the chopped onions, in a butter / oil till they become golden brown.
2. Add chopped tomatoes, bay leaf, garam masala paste and fry for 5 minutes
3. Add chicken pieces and fry for 5-7 minutes.
4. Add turmeric powder, salt to taste and sufficient water. Cover and cook on medium heat till the chicken is fully cooked.
5. Garnish with finely chopped fresh coriander and mint leaves.
Serve hot with: White rice or Briyani or Indian bread varieties (Roti, chapathi, nan and puris)
